Blue Cheese and Chive Steak Sauce

Most people aren’t ambivalent about Blue Cheese-you either like it or you don’t. If you do you’ll love this creamy sauce on your favorite Pre steak.

ACTIVE: 10 min. DIFFICULTY Easy

Ingredients:

  • 1/2 C heavy cream
  • 1/2 C beef stock (we use Minor’s stock base and water)
  • 7 ounces crumbled blue cheese
  • 1 T finely diced fresh chives
  1. Heat heavy cream in a small saucepan over medium low heat, being careful not to scald it.
  2. Stir in beef stock then add the blue cheese, stirring until cheese has melted and sauce is smooth, about 5 minutes.
  3. Reduce heat to low and continue to stir until sauce thickens slightly, about 3 to 5 more minutes. Add chives, stirring to combine.
  4. At this point the sauce will keep for 2 weeks in an airtight container in the refrigerator. Rewarm over low heat and drizzle over prepared steak.
